Carrot Cake Muffins

| 2 tsp. | soda | |
| 4 | eggs (beaten) | |
| 2 cups | sugar | can use ½ brown sugar |
| ¾ cup | oil | 1 ½ cups oil |
| 3 tsp. | cinnamon | 2 tsp. cinnamon |
| 2 cups | flour | |
| 2 tsp. | salt | |
| 3 jars | carrot baby jars | (1=113g) or 2 jars of juniors (1=120g) or can use 2 cups of grated fresh |
Mix all together well blended (3 min), pour into cupcake forms.
Bake at 350°F for 30min (toothpick inserted into center comes out clean).

| 8 oz. pkg. | cream cheese |
| ½ tsp | vanilla |
| 3 cups | powdered sugar |
| ¼ cup | margarine |
| 3 oz | cream cheese |
| 1 tsp | vanilla |
| enough | powdered sugar for consistency |
Mix together until of spreading consistency
